Asian Food Hacks: the Secret to Easy and Delicious Fried Rice

Fried rice is a simple staple in many Asian countries. It’s simple to make, delicious, and it can make use of all the leftovers that you couldn’t finish the previous night. As a result, this simple Asian delicacy that we pay ludicrous amounts for at a restaurant can be made quickly and cheaply for a filling meal and it doesn’t require many kitchen utensils.

Here’s the best way to make a simple and delicious fried rice from leftovers so that you won’t waste anything. Fried rice is a very flexible recipe, so feel free to change anything you see here!


Prepping your equipment and ingredients

As mentioned before, it doesn’t take much to make the perfect fried rice. All you’re going to need is a frying pan (or a wok if you have one) and a set of knives to cut up some ingredients. You can use colored knives, butcher knives or even a steak knife—it doesn’t matter as long as you can cut up some ingredients to use.

Fried rice usually consists of rice, egg and some kind of vegetable or meats. The rice shouldn’t be freshly made rice. Freshly made rice is moist, hot and can turn into a pile of mush when you try to fry it. Let it cool down until it’s chilled and most of the moisture has escaped. The best way to do it is to simply leave it overnight in a rice cooker or an open container.

Next, you want to prepare your other ingredients. Beat an egg for each portion of fried rice you plan to make. You could use more or less egg depending on your tastes. Next is the meat protein or vegetables. Leafy greens are great, but try not to use anything that’s too wet or could release a lot of waters. This means if you do use leafy greens, make sure they’re washed and completely dry before adding them to the pan. You can use pre-cooked meats, leftovers—almost anything! Here’s a sample list of ingredients:

  • Overnight rice
  • Eggs
  • Cooked chicken
  • Scallion
  • Peas
  • Soy sauce
  • Chili sauce

Let’s get cooking!

  1. Beat the eggs and leave in a bowl. Wash and chop the scallions, clean the peas and leave them to dry
  2. Heat a small tablespoon of oil in your pan, add the egg and keep frying until it cooks, break the egg up into small pieces inside the pan
  3. Add in the cooked chicken, stir-fry for about a minute
  4. Add the rice. It will be quite hard and clumpy, so break it up in the pan and make sure the rice covers the pan so that it cooks evenly
  5. Add the peas and scallions
  6. Stir-fry for another minute, making sure not to let the rice stick to the pan
  7. Add the soy sauce and chili sauce
  8. Stir-fry for another 30 seconds

And now you can enjoy! It’s such a simple and easy recipe that almost anyone can make it. It only takes a single pan so cleaning up is easy, and you can easily scale the recipe to accommodate more people if you want. The ingredients can be changed however you like, and you don’t need to conform to exact measurements because it’s such a versatile dish.
